This Edo Period (1603-1868) soy sauce brewery, certified as a Registered Cultural Property, has been renovated as a brewery open to the community, with a café, open kitchen, and bar, that welcomes visitors.
Traditional namako walls (with a white lattice over black slate) that had been damaged by the 2016 Kumamoto earthquake were restored, damaged plaster was peeled off indoors, and the takekomai (bamboo lath) that structually supported the old clay walls was exposed, with the effect of making the passage of time itself a centerpiece of the interior. Lighting fixtures, fittings, and furniture are as thin and delicate as possible aso as not to interfere with the beauty of the framework of thick beams.
